Method
- Heat the olive oil in a large, deep pan over medium heat. Add the chopped onion and sauté until soft and translucent.
- Stir in the sliced carrots, salt, cumin, and chili powder. Cook for about a minute until the spices are fragrant and toasted.
- Crumble the ground turkey into the pan and add the minced bell pepper. Cook, stirring occasionally, until the turkey is cooked through and no longer pink.
- Gently stir in the kidney beans and tomatoes, being careful not to break the beans. Bring to a boil, then lower the heat, cover partially, and simmer for 20 minutes.
- Ladle the hot chili into bowls and serve topped with a generous sprinkle of toasted walnuts and fresh parsley.
