Method
- Required equipment: A medium-sized pot, a cutting board, a knife, a blender, and a strainer.
- Dice the onion into small cubes and grate the carrot using the fine side of a grater.
- Place the lentils in a strainer and rinse them thoroughly under cold water until the water runs clear.
- Place the pot on the stove, add the butter, and wait for it to melt over medium heat.
- Add the chopped onion and carrots to the pot and sauté for about 3-4 minutes until the onions become translucent.
- Add the rinsed lentils to the pot and stir once.
- Pour in 1.5 liters of water and turn the heat to high until it reaches a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 25 minutes.
- Your soup is ready when the lentils are completely soft and have broken down.
- Remove the pot from the heat and use a blender until the soup reaches a smooth consistency.
- Add salt, black pepper, and red pepper flakes, then stir.
- Squeeze fresh lemon juice over the soup before serving.
